The Perfect Little Snack For January Resolutions

A perfectly boiled egg. If you really think about it, what’s not to love about this high protein, low calorie, inexpensive food that’s perfect on sandwiches or salads AND is also a fantastic snack that you can just peel and eat on the go! For many of us, getting more protein and eating healthier is a New Year’s resolution for 2015 and today I want to share my foolproof method for making perfect boiled eggs each and every time.

  • Start with Cold Eggs (Right from the Fridge) and Cold Water.  If your water is too warm or your eggs are closer to room temperature, you’re going to end up with rubbery overcooked eggs (not at all what we’re going for here!). Remember, cold is key!
  • Bring your Water to a Full Rolling Boil (212 degrees F). Don’t worry, you don’t need a thermometer, just be on the lookout for large bubbles rising rapidly to the surface that can’t be stopped by simply stirring the water. As soon as a full rolling boil is reached, remove your saucepan from the burner and cover it with a lid.
  • Set Your Timer for 11 Minutes. Yep, that’s all it takes to produce perfect boiled eggs with creamy golden centers. A few minutes less, they’ll be undercooked. A few minutes more, they’ll be overcooked (complete with that gross gray/green ring around the yolk)!  Eleven minutes…they’ll be perfect!   

Okay, so now that we’ve covered the basics, let’s get started! All you need are cold large eggs (yes, size matters here!), a saucepan, ice water, and a stove with a good timer and you’ll be in business! I usually make at least a half dozen boiled eggs every Sunday night and keep them in the refrigerator unpeeled (my family loves snacking on them all throughout the week with a little sea salt and hot sauce). I also love to make deviled eggs or egg salad with this recipe and have recently started making both with 2% Greek yogurt instead of mayonnaise (just trying to keep it healthy!). Below is my quick and easy method for making perfect boiled eggs, I’m absolutely certain that your family’s going to love these just as much as mine does! Enjoy!   

Perfect Boiled Eggs

6 large eggs (straight out of the refrigerator)

Cold water for saucepan

Separate bowl of ice water

Place eggs in a saucepan and cover them completely with cold water (at least an inch over the top of the eggs). Bring the water to a full rolling boil, uncovered. As soon as the water reaches a full rolling boil, remove the saucepan from the burner, and cover it with a lid. Set your timer for 11 minutes. When the timer goes off, remove the eggs with a slotted spoon and place them in a bowl of ice water (this will stop the cooking process). Peel and serve immediately or refrigerate.
