Wahoo! Grill’s August wine dinner explores the wines of Germany and Austria. On Wednesday, August 6th, Chef Scot E. Davis pairs German and Austrian wines with a fresh twist on their most iconic dishes. The menu is below.

Apple and Caraway Braised Sauerkraut*
Simmered in white wine and brown sugar
Gysler Silvaner Halbtrocken
Mint combines with musk melon flavors for an outrageous riot of flavors not normally found in the Silvaner grape variety. A sneaky, barely perceptible sweetness adds balance to the gulpable wine.
Spaetzle and Peaches
With rosemary butter sauce
Ecker Gruner Veltliner
This wine has fresh green scents like understory nettles and dew soaked ferns with white pepper and spice. It’s citric and nervy – with a spearmint finish. Refreshing, pert and perfect!
Jägerschnitzel
Seared pork tenderloin
Wild mushroom and black pepper cream
Ecker Zweigelt (brillant)
This is a serious Zweigelt, deep and savory with a nose of cracked pepper spice and rich red fruit ranging from velvety plums to raspberries. On the palate it is textural with fine tannins with a core of fruit and layers of clove spice and a long finish.
