Smoked Wings at Villains
Every Monday, Villains Wicked Heroes hosts a pop-up. Every month has a different theme, with June’s being Cage Match. Aside from a few different ribs and ‘redneck sides’, there are the innocuous seeming wings. It would be easy to overlook them, sitting next to a dino sized rib, but these things held their own and then some. Villains confit them in beef fat (oh, yes), then they smoke and fry them. The result is smokey, tender and more meaty than the typical wings. Tossed lightly in a sauce and drizzled with homemade ranch, these can’t be missed. But miss them you may, as they are only around until for one more Monday.
Veal Strip from Kevin Rathbun
This week, Kevin Rathbun, invited a few Atlanta Eats staffers over to show us how to cook the proper steak so that we could show you! He threw three pieces of meat on a Big Green Egg and commenced the magic. One of those was a Veal strip that had us melting and giggling like children. Grilled Sausage and Broccoli Rabe at Bar Amalfi
On Thursday, the team ventured to the newly opened Bar Amalfi to catch the US play in their World Cup game. The latest addition to the Antico empire is a beautiful outdoor bar, complete with cabanas and flowing Prosecco. And it’s no surprise that the ‘bar snacks’ are just as beautiful. We munched on Antico pizza and then this grilled sausage with broccoli rabe.
