What is the Establishment?
Reed: I would call the Establishment a friendly upscale cocktail bar and restaurant. We specialize in small batch and artisan distillery spirits and craft beers and cocktail making, and then artisan farm-to-plate foods.
Tell us about the vibe here?
Reed: It’s fun. We take our cocktail-making seriously; we take food seriously. But, the staff: we don’t take ourselves seriously. We try to have a good time; we try to include all of our guests into the atmosphere.
What makes a great night at the establishment?
Reed: You get the best of everything. You get great cocktails, great beer, and great food. And I think we also add the element of ambience, whether it’s DJ’s and music late night, or even just the setting. We have a picturesque balcony and patio, and then the interior is beautiful and unique. So I think it’s a transformative night out where you can kind of take yourself away from everything.
What is Ormsbys?
Goot: Ormsbys is just a good place to be. We just wanted to open a bar that made everybody feel comfortable. It’s a neighborhood bar with a whole lot of extra fun added to it. We have a bunch of games downstairs so you can hold your cocktail while you play.
Tell us about the food here?
Goot: It’s a mostly scratch kitchen. We make everything from our dressings, sauces; we make our own bratwurst from scratch; we make our own corned beef for our Rueben. So basically, it’s pub food and then some. We do duck breasts, pork chops, prime ribs- really anything you could want.
What kind of crowd do you get here?
Goot: It varies depending on the time of day and day of week. You might see a guy in a suit sitting next to a guy in a t-shirt, and they’re both talking and having a great cocktail and just enjoying themselves.
What’s Dark Horse like?
Webb: It’s a lot of fun; we have 3 stories with 4 bars. The main floor has a bar on the side that gets insanely busy, and a bar on the patio. Upstairs we have a patio bar. Downstairs we have live-band karaoke 4 nights a week, and it’s a lot of fun.
What kind of people do you get here?
Webb: A lot of college students, and also a lot of young professionals; But people like to come here and have a lot of fun and drink a lot.
What’s the key to getting a bartender’s attention?
Webb: The key to getting a bartender’s attention, or my attention specifically, is to stand there patiently- I see you, I will get to you. Don’t wave your money; don’t wave at me; don’t yell at me.
Tell us about Stats?
Sime: Stats is a 13,000 square foot, 3 level sports bar and event facility located in Centennial Park District right next to College Football Hall of Fame. We serve upscale sports bar food. Everything is made from scratch here; it’s a little bit different than you find at your neighborhood sports bar, really being able to cater to families, business associates, and also private events.
What’s the food philosophy here for you guys at Stats?
Sime: The food here is supposed to be laid back but really well prepared. You can come here with your family or your friends, and everyone’s going to find something that they like here, whether it’s nachos, different kinds of hot wings, some new inventive dishes that we think are really a hit with our guests.
Tell us about the scene here on a crazy night?
Sime: On a crazy night, we’ve got 3 different bars, 3 stories, and a great deck that’s all filled with sports fans that come here for the games from out of town from all over the country.
2 oz of New Amsterdam Vodka
2 oz of our smoked pineapple puree
1 oz of our habanero syrup
0.5 oz of fresh lime juice
2 oz of decanter bitters.
It’s shaken, strained over ice, and then we add another ingredient, which is our smoked brandied cherries, to the drink. We let them sink to the bottom for presentation and a little bit of sweetness.

Fresh squeezed lime
In shaker with ice, add 2 fresh mint leaves, juice from 1 quarter lime wedge and 2 dashes of agave nectar, muddle ingredients. Add in orange juice, vodka and _____ and shake. Serve in glass with lime as garnish.
