Cheap, Quick AND Delicious?! These Are Your New Go-To Holiday Appetizers!

Atlanta Eats | Mom Thyme

What do you get when you combine creamy Brie cheese, crispy phyllo shells, and your favorite fruit topping? A quick and easy appetizer that’s the ultimate crowd pleaser and one of my favorite “go-to” dishes during the holiday season! I’ve been super excited to share this fantastic recipe for Baked Brie Bites because I’m certain that you’re going to love them just as much as I do (particularly if you’re a busy mom on the go!). So…what makes them so great?

Ready in 15 Minutes or LessThese Baked Brie Bites look and taste like you spent hours in the kitchen, but, in reality, they take less than 15 minutes to make from start to finish. They’re easy, elegant, and pair perfectly with most any party menu and a fabulous glass of wine!

Only 3 Ingredients Required – Unlike many other fancy holiday dishes (pâtés, cheese balls, antipasto platters, etc.), this recipe calls for only 3 ingredients. Even better, they’re all ingredients that you can keep on hand in the refrigerator/freezer for weeks (even months, if the Brie is unopened).

Budget-Friendly – During the holidays, most all of us are watching our budgets. This recipe is perfect for cost-conscious moms because: 1) You can usually find a coupon for the Brie online or in your supermarket flyer, 2) Most of us already have preserves on hand, just use whatever you’ve got, 3) Phyllo cups are very inexpensive (usually less than $2 for 15 cups).

Last, But Not Least…They’re Amazingly Delicious!!! – Seriously, I double dog dare you to make these Baked Brie Bites and not eat at least one as soon as they come out of the oven – these little jewel-toned treats are absolutely IRRESISTIBLE!

Now that I’ve shared with you my top reasons for why you should make Baked Brie Bites this holiday season, let me share with you the recipe. You’ll definitely want to pin it on Pinterest, save it on your computer, write it down, etc. – as it’s soon to become one of your favorite “go-to” holiday recipes too! Enjoy!

Baked Brie Bites

Makes around 30 Bites

Two boxes store bought phyllo shells (found in your grocer’s freezer section)

Wedge of good Brie cheese

Jar of fruit preserves (Raspberry, Pear, Strawberry, Fig, etc.)

Preheat oven to 350 degrees F (or temperature listed on side of phyllo package). Place phyllo shells on a baking sheet lined with parchment paper. Cut the Brie into small bite sized pieces and place in the phyllo shells. Top Brie with ½ teaspoon to 1 teaspoon of fruit preserves being careful not to overload the shell.

After filling each phyllo shell, bake the Brie Bites for 10 minutes or until the Brie is starting to melt and the shells are golden brown.  Let cool slightly and arrange on a serving platter.

**Note: I like to use Athens Mini Fillo Shells for this recipe
