Mara Davis’ Easiest Enchiladas EVER Recipe

Our talented host Mara Davis will tell you herself that she’s *much* more of a restaurant goer than a chef, but she does have an excellent and super easy enchiladas recipe up her sleeve that you and your family will love! Full video, recipe, and instructions below!


Rotisserie Chicken (any flavor)
1 sweet onion
2 handfuls of spinach
1 bag of monterey jack cheese
1 jar of green salsa
salt and pepper
hot sauce
chili powder
fajita size flour tortilla
cilantro for garnish
casserole dish
1). Debone and shred half chicken and shred, put aside.
2). Chop onion, saute until caramelized then add spinach.
3). Finish and then combine with shredded chicken.  Mix.
4). Add half the bag of cheese and half of the jar of salsa to the mixture.
5). Stir for the filling, add salt, pepper, hot sauce and chili powder.
6). Add to each tortilla and roll up in the casserole dish.
7). Add salsa to the enchiladas on top and finish with cheese.
8). Bake at 375 for about 15 minutes covered.
9). Remove cover and bake for another 10-15 minutes until golden brown. Serve and enjoy!
