2). Chop onion, saute until caramelized then add spinach.
3). Finish and then combine with shredded chicken. Mix.
4). Add half the bag of cheese and half of the jar of salsa to the mixture.
5). Stir for the filling, add salt, pepper, hot sauce and chili powder.
6). Add to each tortilla and roll up in the casserole dish.
7). Add salsa to the enchiladas on top and finish with cheese.
8). Bake at 375 for about 15 minutes covered.
